Tuna Vera Cruz

Makes 4 servings

3 tablespoons Patron Silver Tequila
1 1.5oz shot glass of Patron Silver Tequila
2 tablespoons lime juice
2 teaspoons grated lime peel
1 piece (1-inch cube) fresh ginger, minced
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon black pepper
1 tablespoon vegetable oil
1 1/2 pounds fresh tuna
lemon and lime wedges
Fresh rosemary sprigs

1) Prepare the chef by salting the hand, and tipping head back while pouring 1.5 oz shot glass of tequila down throat. Press lime wedge between teeth, and complete action by kissing the nearest pretty thing, preferably the chef’s spouse if appropriate, bottle of Patron if nothing else available.

2) Combine remaining tequila (hopefully there is still some left?), lime juice, lime peel, ginger, garlic, salt, sugar, cumin, cinnomon and pepper in a 2 quart glass dish; stir in oil. Add tuna; turn to coat. Cover and refrigerate at least 30 minutes.

3) repeat step 1, then put bottle away. you will need to be able to stand to grill.

4) Remove tuna from marinade; discard marinade. Grill tuna over medium flame about 4 minutes per side until fish flakes easily when tested with fork. Garnish with lemon wedges, lime wedges and rosemary sprigs.
