Tuna Tacos with Grilled Pineapple Salsa
Tuna Vera Cruz
1/2 large pineapple, peeled, cored and cut into 1/2 inch thick slices
8 corn tortillas
1/2 medium red onion, cut into thin slivers
1/4 cup cilantro leaves, chopped
1 tablespoon lime juice
1 to 3 tablespoons minced, seeded jalapeno pepper
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1) prepare Tuna Vera Cruz; keep warm
2) Grill pineapple over medium flame about 2 minutes per side until lightly browned
3) Cut grilled pineapple into 1/2 inch cubes
4) Combine pineapple, onion, cilantro, lime juice, jalapeno pepper, garlic, salt and black pepper in medium bowl
5) Break tuna into bite-size chunks. Spoon pineapple salsa down center of each tortilla; top with tuna. Roll to enclose. Serve immediately.
